This dressing was born out of my husband’s love of all things lemon and our desire to avoid bottled dressings which aren’t nearly as delicious as homemade. This also goes well on chicken as both a marinade and a finishing dressing.
Juice of one lemon
Zest of one lemon
4 tbs. olive oil
2 tbs. honey
4 tbs. white vinegar
6 basil leaves, torn
1 tsp. red pepper flakes
1 tsp. salt
1 tsp. fresh ground black pepper
3 tbs. fresh ground Parmesan cheese
Whisk all ingredients, use to dress salad.
