Traditional banana bread, while tasty, can leave you feeling hungry not too long after enjoying. That’s where this balanced banana bread recipe comes in. Delicious with just a bit of nutrition, thanks to the addition of vanilla protein powder, which keeps you satiated.
Ingredients
- 1 cup all-purpose flour
- 1 stick (1/4 cup butter, melted)
- 1/4 cup of Stevia
- 6 very ripe bananas
- 1/2 cup milk (I use almond)
- 2/3 cup vanilla protein powder
- 2 tbs baking soda
- 1/2 cup chocolate chips (optional)
- 3 eggs
- 1 tbs. pure vanilla extract
- 1 tbs. salt
Directions
- Preheat your oven to 350 degrees farenheight.
- Mix the wet ingredients: Mash the peeled bananas. Add in melted butter. Stir in milk, then eggs and vanilla.
- Mix the dry ingredients: Mix flour, baking soda, protein powder, salt, and chocolate chips.
- Combine ingredients: Mix the wet ingredients into the dry until just combined.
- Garnish and Serve: Garnish the fruit bowls with fresh mint leaves for a burst of freshness and color. Serve immediately and enjoy!
Notes
Feel free to customize these fruit bowls with your favorite fruits and nuts. Kiwi slices, mango chunks, or pineapple tidbits would make excellent additions. To make this recipe vegan-friendly, omit the Greek yogurt or use a dairy-free alternative such as coconut yogurt.
